The Cedar tree is not just the
symbol of the national flag of Lebanon, but is a historical entity
mentioned often in the Bible and other ancient texts. The Cedar played
an important part in the culture, trade and religious observances of
the ancient Middle East and was an important material used for
shipbuilding and for the construction of tombs and other major
buildings such as the Temple of Solomon.
The
Lebanese style of cooking we know today has evolved and blended with
other regions over the past 7,000 years. At The Cedar Tree, methods of
cooking include baking and grilling, using only the finest, fresh
ingredients available making for a healthy, low fat
menu.
The flavours of the food are enhanced by the
use of precise amounts of herbs and mild spices. The dishes themselves
are cooked on the spot, preserving the natural taste and health giving
properties of the food.
The Cedar Tree restaurant
was established 22 years ago, but was given a new lease of life two
years ago when it was bought by Gabby Abou-Saba, a qualified and
experienced chef. Gabby, his wife Laura and brother Tarek now provide
the restaurant and its patrons with an immaculate family atmosphere
where one can fully relax and enjoy meals such as traditionally grilled
lamb served with delicious honey and orange juice cous-cous, or prawns
cooked with tamarind.
